Gelato Supplies is the official Australian distributor of Elenka, an Italian manufacturer of gelato and pastry ingredients founded in Palermo, Sicily, in 1959. Pastes, variegates, bases, coverings and semi-finished pastry products for gelaterias, pastry shops, restaurants and hotel groups.

Italy was in its post-war boom when Antonino Galvagno began producing spirits and liqueurs for the bars of his home town, Palermo. The accident that made the company came soon after: an attempt at a dessert-flavoured liqueur that turned out to be unsuitable as a drink and close to perfect as a gelato flavouring. That was Zuppa Inglese, and it is still in the range.
Dariloy followed — one of the first balanced gelato bases anyone had made — and then the products that took the name outside Sicily: La Nocciola hazelnut paste and Pistacchio OroVerde. Elenka today works with PGI hazelnuts from Piedmont, pistachios from Etna, Sicilian almonds and chocolate from Modica, and supplies gelato makers and pâtissiers in more than sixty countries.
What being the official distributor means
It means the product you receive came through Elenka’s own distribution channel, with the manufacturer’s specification sheet behind every product code. It means we can get an answer from the factory when a question needs one, rather than guessing from a label.
It also means we are accountable for the range in this market: what is stocked, what can be indented, and how long each takes to arrive.
Why the technical side matters here
Elenka’s recommended dosages assume European conditions. An Australian display cabinet in January is a harder environment than the one those figures were set in, and a base that behaves in Palermo in April can lose its structure in Parramatta in summer.
Most of the useful work we do is in that gap: adjusting dosage, recommending a higher stabiliser load where a cabinet runs hot, and being honest when a product is not the right answer for what you are making.
Who we supply
Gelaterias, pastry shops, restaurants, cafés, hotel groups and distributors. We are a trade supplier: there is no retail pricing on this site, and quantities are commercial rather than domestic.
