Choosing within Coverings, Crunches & Toppings

Coverings are the most temperature-sensitive products in the range and the ones most often blamed on the supplier when the fault is in the workflow. A pail that seized, a shell that cracked and a coating that went thin and greasy are three different mistakes, and all three are recoverable knowledge rather than product defects.

How a covering works

A covering is a fat-continuous system: cocoa butter or vegetable fat carrying cocoa, sugar, milk solids and flavour. It is liquid when warm and solid when cool, with no tempering step and no crystalline structure to manage. That is what makes it practical for a gelateria — and what makes it unforgiving about water.

Applied at 35 to 40 degrees onto a product at service temperature, it sets within seconds into a shell thin enough to bite through cleanly. The setting is purely thermal: the fat crystallises on contact with the cold surface. Nothing is waiting to happen afterwards, which is why a covering does not bloom, does not need to be seeded, and can be melted and re-melted for as long as the pail lasts.

The contrast with couverture chocolate is worth understanding rather than memorising. Couverture is built around cocoa butter's several crystal forms, and tempering exists to select the right one; get it wrong and the chocolate is dull, soft and streaky. A covering is formulated so that question never arises. You trade some of the snap and some of the melt character for a product that behaves the same way on a Tuesday morning as it does during Saturday service.

Two decisions sit behind that table. The first is dark versus milder dark, which is a menu decision rather than a technical one — a cocoa-forward shell will dominate a delicate base and rescue a dull one. The second is whether the shell carries texture of its own: a coating with granules through it eats differently and needs a slightly wider nozzle or a more generous dip to avoid dragging.

Where it goes wrong

Water contamination. A wet spatula, condensation off a cold lid, a splash from a nearby tap. Fat-continuous systems have no capacity to absorb water at all, so a single drop makes the sugar particles clump and the whole pail seizes into a grainy paste. It cannot be recovered by heating, thinning or stirring. Dedicate utensils to coverings, keep them dry, and never store a pail where condensation can drip into it.

Overheating. Above about 45 degrees the fats begin to separate. The coating goes thin and greasy, applies too heavily, and never fully recovers its body even after cooling. A water bath with a thermometer costs less than one ruined pail.

Too great a temperature gap. A stick straight from a minus-eighteen blast freezer, dipped into a forty-degree coating, produces a shell that contracts faster than it can accommodate and cracks as it sets. Temper the product to about minus twelve first. This is the single most common cause of cracking, and it looks exactly like a product fault.

Dipping too slowly. Contact time controls thickness. A slow dip builds a heavy shell that separates from the gelato as it warms; a brisk one gives the thin, even layer the product was designed for.

Granules and crunch

Crunch inclusions are applied at the last moment. Anything with a wafer, biscuit or nut particle starts absorbing moisture the instant it touches gelato, and its texture has a working life measured in minutes rather than hours once it is in contact with an unsealed surface.

Almond crunch is the exception that proves the rule, in that it has two lives. Sprinkled at service it is a decoration; worked into a mix at 130 to 150 grams per litre it is a flavouring, and caramelised almond is one of the more recognisable flavours in the Sicilian repertoire. It is filed here rather than with the pastes because the granule form is what distinguishes it — if what you want is almond flavour without the texture, the almond pastes are the better answer.

Working in a humid kitchen

Water is the enemy of this category, and an Australian summer supplies it for free. A pail held at 40 degrees in a room at 30 degrees and 70 per cent relative humidity is a condensation trap: every time the lid comes off, moist air meets a warm surface, and every time it goes back on, the underside of that lid collects water which drips straight in on the next opening.

None of this is dramatic enough to notice. It is a pail that seizes in February and behaves perfectly in July, and it gets recorded as a bad batch.

The fixes are unglamorous and they work. Wipe the underside of the lid before it goes back on. Melt only what a session needs rather than holding a full pail warm all day, since repeated cycling also costs body. Keep the melting station away from the dishwasher, the sink and the door. Store working pails somewhere with stable temperature rather than next to the blast freezer, where the air is coldest and the swing is largest. And if a pail must be held warm across a service, hold it covered and check the lid rather than the coating.

Toppings are a different product

The topping sauces share a shelf with the coverings and behave nothing like them. They are semi-dense, they hold their shine, and they are formulated not to solidify at low temperature — so they cling to a finished surface rather than setting into a shell. Chocolate, caramel, black cherry, strawberry, forest berries, hazelnut and pistachio all run in one-kilogram packs, which is the right size for a product used a spoonful at a time.

The distinction that matters operationally: a topping goes on at service, a covering goes on before freezing or before the product leaves the bench, and a variegate goes into the tub during filling. Using a topping as a ripple gives a sauce that stays soft but bleeds; using a variegate as a topping usually gives something too loose to sit where you put it.

Frequently asked questions

At what temperature should I apply a covering?

Between 35 and 40 degrees Celsius for most Elenka coverings. Hotter and the coating melts the surface it is meant to seal; cooler and it thickens, goes on unevenly and cracks as it sets.

Why does my chocolate coating crack when it sets?

Usually the coating was too cool on application, or the frozen product was too cold. A large temperature gap makes the shell contract faster than it can accommodate. Temper the product to service temperature first.

Can coverings be reheated?

Yes, gently and repeatedly, provided the coating is never taken above about 45 degrees and no water enters the pail. A single drop of water will seize a fat-based coating and it cannot be recovered.

Do coverings need tempering like couverture chocolate?

No, and that is the point of them. A covering is formulated so its fats set without a crystalline structure to manage, which is what makes it practical in a gelateria that has no tempering machine and no time to run one.

How much covering does a stick or a cone need?

Coverage depends on viscosity at the moment of dipping, not on the pail size, so measure it in your own workflow rather than from a data sheet. Dip one batch, weigh the pail before and after, and divide — the figure will be stable enough to cost from.
