Choosing within Variegates & Ripples
A ripple is the cheapest way to turn one gelato into three, and the fastest way to ruin a tub. The difference is entirely down to formulation, and it is not something you can judge by tasting the sauce warm from the pail.
What makes a variegate different from a sauce
Freezing point depression. A variegate carries enough sugar — and often enough fat — that it stays plastic at cabinet temperature instead of setting into a brittle seam. Pour a standard dessert sauce into a tub of gelato and it freezes into a shard that shatters under the spatula and bleeds water as it thaws. The sugars doing this work are usually not sucrose alone; invert sugars and glucose syrups depress the freezing point far more per gram, which is why a variegate can taste less sweet than a topping sauce while behaving as though it contained more sugar.
Water activity. A well-built variegate holds its water, so it neither draws moisture out of the gelato around it nor pushes moisture into it. That is what keeps the line sharp on day three rather than smeared into a grey halo. It is also the property that decides whether a crunch inclusion survives, and it is the main thing separating a purpose-made variegate from a jam thinned down to look like one.
Fat continuity. The cocoa and hazelnut cream ripples are fat-continuous systems with very little free water at all. That is why they stay soft at low temperature almost regardless of the cabinet, and why they can be used for layered gelato, cremino in a tray, ganache and mousse work from the same pail.
The three lines, and what each is for
The Elenka range splits into three families with genuinely different jobs, plus a handful of products that do not belong to any of them.

The Fanta line is the workhorse. Crumble carries crumble pieces; Crockella carries cereal, which is a larger and noisier particle. Within each, the flavour variants change what the crunch tastes of rather than how it behaves: chocolate granules, chopped pistachio, red fruits, toasted hazelnut with cereal.
Ambrogio is the chocolate family — classic cocoa and hazelnut with wafer, dark, white, pistachio, and a cherry version carrying candied fruit. Otella is the smooth end: cocoa and hazelnut creams that do not freeze hard, in classic, hazelnut and caramel.
Then there are the products that exist because a specific flavour became popular: dulce de leche, a pistachio and potato-crisp variegate, and a pistachio-and- kataifi preparation following the Dubai chocolate trend. These sell hard and briefly. Build one flavour around each, do not build a menu around them.
Layering technique
Ripple as you fill, not after. Alternate thin layers of gelato and sauce as the tub fills, and resist the temptation to stir — the visible line is the product, and once it is stirred it is just a flavoured gelato with an uneven colour.
Ten to twenty per cent of tub weight is the working range. Below ten the line disappears; above twenty the tub becomes difficult to portion evenly, the flavour takes over from the base, and the economics stop working because a variegate costs more per kilogram than the gelato it displaces.
For crunch-bearing variegates the distribution matters more than the ratio, because the inclusion is what the customer notices. Spread it evenly through the depth of the tub: a crunch concentrated in the top third disappears within an hour of service and the remaining two-thirds is a plain tub that customers have already been sold as something else.
The crunch problem, and living with it
Every cereal, wafer or biscuit inclusion begins absorbing moisture the moment it enters a tub. Nothing in the formulation stops this — it can only be slowed, by fat coating the particle and by the sauce around it holding its own water tightly. Crunch has a working life measured in hours, not days.
The practical answers are all operational rather than technical. Ripple crunch-bearing products into smaller tubs. Turn those tubs over faster, and schedule them for the busy end of the day rather than the quiet start. Do not prepare them a day ahead for a weekend, which is exactly when the temptation is strongest. And judge the product by how it eats at hour four, because that is when most of it will be sold.
Costing a ripple properly
A variegate is not an addition to a tub; it is a substitution. Fifteen per cent of a tub by weight is fifteen per cent less gelato, so the cost of a rippled tub is not the cost of the plain tub plus the sauce. It is eighty-five per cent of the mix cost plus fifteen per cent of the sauce cost.
That arithmetic almost always favours the ripple, because a variegated flavour sells at the same price as a plain one and frequently sells faster. It also puts a ceiling on the ratio: past about twenty per cent the sauce is doing the work the base was paid for, and the flavour narrows to one note.
The comparison worth running is against the alternative way of creating the same flavour. A chocolate-hazelnut tub built from a paste at 100 grams per litre and a tub built from a plain base with a hazelnut ripple at fifteen per cent are different products at different costs, and the second one photographs better. Run both numbers before deciding which flavour a new ripple is replacing on the menu.
Storage and handling
Variegates are shelf-stable before opening and refrigerated after. Do not freeze an opened pail and re-temper it — the emulsion separates and the sauce never recovers its original body, which is a slow and expensive way to discover that the product was fine all along.
Use clean, dry utensils, and never return unused product to the pail. A variegate that has been through a tub has picked up milk solids and a bacterial load that the pail's own water activity was never designed to hold in check.
A note on gluten-free variants
Elenka's own catalogue records gluten-free counterparts to several of the crumble products under separate codes. None of those codes appear on the current Australian list, so nothing on this site is presented as a gluten-free ripple, and no dietary claim is made for any product here. If you need a gluten-free crumble for a menu, ask — it is a supply question we can put to the manufacturer, not something to infer from the range.
More generally, ingredient declarations, allergen statements, shelf life and storage conditions are absent from these pages because no Elenka specification sheet is held for the Australian range. Nut and cereal inclusions make this category one where the missing data matters, and the obligation to declare falls on the business serving the customer.

Why does my ripple go hard in the tub?
