About Ambrogio Pistacchio

Every other pistachio ripple in this range carries something crunchy. This one does not, and that is the reason to choose it.

What it is

The pistachio member of the Ambrogio variegate line, made with Sicilian pistachios. Smooth, green, and formulated to stay plastic at cabinet temperature so it holds a visible line rather than freezing into a seam.

Why smooth is a feature, not an absence

The crunch-bearing pistachio ripples — Crockella, Crumble, Patasnack — all have the same limitation: their inclusion begins softening the moment it touches gelato, and the texture that justified the product is gone within hours.

That is manageable when a tub turns over in a session. It is a problem when a tub has to sit through a quiet Tuesday and still look and eat correctly on Wednesday.

Ambrogio Pistacchio has nothing to soften. The line is as sharp on day three as on day one, and the flavour does not degrade. For a site with variable trade — which is most sites outside a peak week — that reliability is worth more than the crunch.

Where to put it

Over a plain cream base. The green line needs something pale to read against, and a smooth ripple's entire visual contribution is that contrast.

Over a pistachio gelato it disappears — same colour, same flavour, no visible line, and you have paid for a ripple that does nothing a heavier paste dosage would not have done more cheaply. That combination gets built more often than it should.

Using it

Ten to twenty per cent of tub weight, layered as the tub fills, not stirred. The line is the product.

Because there is no inclusion to distribute, the technique is more forgiving than with the crunch ripples — you are managing the visual only, so alternating thin layers as the tub fills is enough.

Against the rest of the line

Ambrogio Classic is the cocoa, hazelnut and wafer version and carries crunch. This is the smooth one. Carrying both gives a cabinet one ripple for tubs that move and one for tubs that sit, which is a more useful pair than two flavours from the same half of the range.

Which pistachio ripple should I carry?

This one if the tub has to look the same tomorrow, a crunch-bearing ripple if it will sell today. Ambrogio Pistacchio has no inclusion to soften, so it is the ripple for a flavour that sits rather than turns over fast.

Does it replace a pistachio paste?

No. A ripple puts pistachio in seams through a base; a paste makes the whole tub pistachio. Sell it as a pistachio ripple rather than as a pistachio gelato — customers can taste which one they bought.

What base does it work over?

A plain cream base, where the green line has contrast to read against. Over a pistachio gelato it doubles up and the visible ripple disappears, which wastes the thing you paid for.
