Ambrogio Classic
Elenka product code 1190
A chocolate variegate carrying cocoa, hazelnuts and wafer pieces, so it brings texture as well as a line. It is the ripple customers notice, and the one whose crunch has a working life measured in hours rather than days.
Specification sheets are supplied to trade customers on request.
About Ambrogio Classic
A ripple that only adds flavour is doing half a job. Ambrogio adds a noise, and noise is what customers describe when they tell somebody else about a gelato.
What it is
A chocolate variegate in the Ambrogio line, carrying cocoa, hazelnuts and wafer pieces. The sauce holds the line; the inclusions provide the texture.
The crunch problem, honestly
Every wafer, cereal or biscuit inclusion begins absorbing moisture the moment it enters a tub. Nothing in any formulation stops this — fat coating the particle slows it, and a sauce that holds its own water tightly slows it further, but the direction is one-way.
The working life of a crunch is measured in hours. That is not a defect and it is not something to be corrected; it is a property to schedule around.
The operational answers are all straightforward. Ripple crunch-bearing products into smaller tubs. Turn them over faster than smooth tubs. Put them out for the busy part of the day rather than the quiet start. Do not prepare them the day before a weekend, which is exactly when the temptation is strongest. And judge the product at hour four, because that is when most of it will be sold.
Distribution beats ratio
Ten to twenty per cent of tub weight is the working range, as for any variegate. But with a crunch-bearing product, where it goes matters more than how much.
Distribute it evenly through the depth as the tub fills. A crunch concentrated in the top third looks spectacular in the cabinet for an hour and then the tub is plain for the rest of the day — while the customer at hour three has paid for the version they saw photographed.
Against the alternatives
Otella is the smooth end of the same idea: no inclusion, no working life, the same visible line tomorrow. It is the ripple for a tub that will sit.
Fanta Crumble is the other crunchy family — crumble pieces rather than wafer, a different particle and a different noise. Carrying one from each family gives more variety than carrying two flavours from either.
What we do not publish
Ingredients, allergens, shelf life and storage conditions are absent from this page because no Elenka specification sheet is held for the Australian range. Absent means the data is not held, never that the answer is no. This product carries hazelnut and wafer, so both the tree-nut and the cereal declarations matter — request the sheet before answering an allergen enquiry.

Otella
A cocoa and hazelnut cream that does not freeze at low temperature, which is what makes it work as a ripple, as a cremino layer, as a ganache and as a mousse component from the same pail. It is the most versatile product in the variegate range.

A crunchy biscuit-crumble ripple sauce for gelato, cakes and semifreddos. It stays soft at cabinet temperature and keeps its texture through the tub, giving a baked-biscuit contrast without a separate preparation.

The chocolate topping in Elenka's Salsa line: semi-dense, glossy, and formulated not to solidify against a frozen surface. It is the highest-volume topping in most cabinets and the one whose quality is most visible, because chocolate over vanilla hides nothing.

The pistachio member of the Ambrogio variegate line, made with Sicilian pistachios. It is the smoothest route to a pistachio ripple in the range — flavour and colour without an inclusion whose texture expires by mid-afternoon.

Frequently asked questions
How long does the crunch last?
Hours, not days. Wafer and cereal inclusions absorb moisture from the gelato around them continuously, and nothing in the formulation stops that — it can only be slowed. Ripple into smaller tubs and turn them over faster.
How do I stop the crunch collecting at the top?
Distribute it through the depth of the tub as you fill rather than layering it near the surface. A crunch concentrated in the top third disappears within an hour of service, and what is left is a plain tub the customer was sold as something else.
Should I choose Ambrogio or Otella?
Ambrogio where the texture is the point and the tub will sell today; Otella where the ripple has to look the same tomorrow. They are the crunchy and smooth ends of the same idea.
