The crunch problem, honestly

Every wafer, cereal or biscuit inclusion begins absorbing moisture the moment it enters a tub. Nothing in any formulation stops this — fat coating the particle slows it, and a sauce that holds its own water tightly slows it further, but the direction is one-way.

The working life of a crunch is measured in hours. That is not a defect and it is not something to be corrected; it is a property to schedule around.

The operational answers are all straightforward. Ripple crunch-bearing products into smaller tubs. Turn them over faster than smooth tubs. Put them out for the busy part of the day rather than the quiet start. Do not prepare them the day before a weekend, which is exactly when the temptation is strongest. And judge the product at hour four, because that is when most of it will be sold.

Distribution beats ratio

Ten to twenty per cent of tub weight is the working range, as for any variegate. But with a crunch-bearing product, where it goes matters more than how much.

How long does the crunch last?

Hours, not days. Wafer and cereal inclusions absorb moisture from the gelato around them continuously, and nothing in the formulation stops that — it can only be slowed. Ripple into smaller tubs and turn them over faster.

How do I stop the crunch collecting at the top?

Distribute it through the depth of the tub as you fill rather than layering it near the surface. A crunch concentrated in the top third disappears within an hour of service, and what is left is a plain tub the customer was sold as something else.

Should I choose Ambrogio or Otella?

Ambrogio where the texture is the point and the tub will sell today; Otella where the ripple has to look the same tomorrow. They are the crunchy and smooth ends of the same idea.
