Chocolate sauce over vanilla gelato is the most-photographed thing in any gelateria and the easiest to get wrong, because there is nowhere for a poor product to hide.

What it is

The chocolate member of Elenka's Salsa topping line: semi-dense, with the characteristic gloss the line is built around, and formulated so that it does not solidify at low temperature. It attaches to the surface it is poured over and stays where it is put.

The shine is the specification

A topping has one visible job and one invisible one. Visibly, it has to look wet and glossy against a frozen surface, hold that appearance while a customer walks to a table, and photograph. Invisibly, it has to do that without weeping water into the product underneath or sliding off it.

Both come from the same property: a semi-dense consistency with the water tied up tightly enough that it neither runs nor separates. A thin sauce runs off. A stiff one sits in a lump. The narrow band between those is where a purpose-made topping lives, and it is why a dessert sauce off a supermarket shelf disappoints over frozen product even when it tastes fine.

Against a chocolate covering

The two get bought interchangeably and behave nothing alike.

A covering is fat-continuous, applied warm at 35 to 40 degrees, and sets within seconds into a thin shell you bite through. It is unforgiving about water and it needs a warming station.

This needs no equipment, sets into nothing, and stays a sauce. If you want the snap, buy the covering. If you want the pour, buy this. Sites that try to make one product do both jobs end up doing neither well.

Practical notes

Do not heat it to make it flow more freely. It is formulated to flow at ambient temperature, and warming thins it past the point where it clings — you lose the gloss, which is the part customers actually respond to.

A kilogram is the right size for something used a spoonful at a time. Keep it covered between services and use clean dry utensils; a topping spends most of its life open, which is the whole risk profile of the product.

What is the difference between this and a chocolate covering?

Setting behaviour. A covering is fat-based and sets into a shell on contact with frozen product; this stays semi-dense and glossy and never hardens. Choose the covering for a shell you bite through and the topping for a sauce that stays a sauce.

Will it go hard in the cabinet?

No. It is formulated to resist solidifying at low temperature, which is what lets it hold its shine over a frozen scoop instead of cracking into a brittle crust.

Can I warm it to make it flow?

Gently if at all. It is built to flow at ambient temperature, and heating a topping thins it past the point where it clings — which loses the shine that is most of what you are paying for.
