What it is

A caramel topping in the Salsa line: semi-dense, glossy, formulated to attach to a surface and to stay soft at low temperature. It goes on at service, over a finished scoop, a semifreddo, a dessert or into a drink.

Topping, covering, variegate — three different products

This is the distinction that decides whether a product works where you put it, and the three get confused constantly because they sit on the same shelf.

A topping goes on at service. It clings, it shines, and it never sets.

A covering goes on warm, before service, and sets on contact into a thin shell.

A variegate goes into the tub as it fills and holds a visible line inside the frozen product.

Using a topping as a ripple gives a sauce that stays soft — which is half right — and bleeds into the gelato around it, because it was never built to hold its own water against a frozen mass. The line goes cloudy within a day.

Why caramel specifically

Caramel is the most useful topping to carry if you carry only two, because it pairs across the whole cabinet rather than within one family. It works over vanilla, over chocolate, over nuts, and it is the making of a banana tub. Fruit toppings pair with fruit; caramel pairs with everything.

Frequently asked questions

Can I use it as a ripple through a tub?

It will stay soft, but it will bleed. Toppings are formulated to sit on a surface, not to hold a line inside frozen product, so a variegate is the right tool for a ripple — this is the right tool for the last three seconds before the product reaches the customer.

Why does it not set hard in the cold?

Its sugar composition depresses the freezing point far enough that it stays semi-dense and glossy against a frozen surface. That is the whole specification of a topping: cling, shine, and no brittle seam.

What is the one-kilogram pack for?

A product used a spoonful at a time. A topping in a large pail spends most of its life open, picking up moisture and handling, and a kilogram is about the right amount of standing time for one.
