About Fanta Crockella Pistacchio
Pistachio is the most profitable word on an Australian gelato board and the most expensive ingredient behind it. Products like this one exist in the gap between those two facts, and that gap deserves an honest look.
What it is
A crunchy variegate made with cereals and pistachio, in the Crockella line — the larger-particle family, against the finer Crumble products.
The honest version of the commercial argument
Rippled through a plain cream base, this puts pistachio flavour, pistachio colour and pistachio texture into a tub at a fraction of what a pure pistachio paste costs per litre. That is a real saving and a legitimate product.
It is also a different product, and the difference is tasteable. A paste-flavoured tub is pistachio all the way through; a rippled tub is a cream gelato with pistachio in seams. Customers who order pistachio and get the second one usually know, even if they cannot articulate it.
So the rule is simple: sell it as what it is. A cabinet running "pistachio crunch" alongside a genuine "pistachio" is offering a choice. A cabinet running this labelled as "pistachio" at a pistachio price is running a risk that costs more than the paste would have.
Where the ripple genuinely wins
Not as a substitute — as a different eating experience. A smooth pistachio tub has one texture. This one has crunch, and crunch is what most people describe when they recommend a gelato to somebody else.
It also photographs better, which is not a trivial consideration for a product sold largely on sight.
Particle size and tub depth
Crockella's cereal is larger than Crumble's crumble pieces, and a large particle cannot distribute evenly through a shallow layer. In a thin display tub the spatula catches clusters or misses them, and consecutive servings differ visibly.
Use it in a deeper tub, or in cakes and semifreddi where a cut face shows the inclusion off properly.
The crunch clock
Hours, not days — cereal takes up moisture from the gelato continuously. Smaller tubs, faster turnover, scheduled for the busy part of the day, and judged at hour four rather than at extraction.
