About Pistacchio Trinacria 100%
Trinacria is the pistachio paste for a gelateria that sells a lot of pistachio. It sits between Oroverde's delicacy and the directness of a paste built for volume, and it comes in a pail size that reflects how it is actually used.
What it is
A pure pistachio paste made from Mediterranean nuts selected from established growing areas and roasted gently. Elenka declares no artificial flavours and no artificial colourings. Like every pure nut paste, what you are buying is the nut and the roast — there is nothing else in the pail doing the work.
How it compares
Against Oroverde, the difference is character rather than strength. Oroverde is floral, delicate and long; Trinacria is rounder, richer and arrives sooner. In a plain pistachio tub, many people prefer Oroverde. In a tub with a pistachio ripple through it, or next to a gianduia, or under a chocolate coating, Trinacria holds its own where Oroverde gets talked over.
Both are dosed at 80 grams per litre of mix, which is a genuinely useful property: you can move between them without touching the rest of the recipe, and you can trial the change on a single batch rather than on a rebalanced one.
In the mix
Eighty grams per litre of finished mix — not per litre of milk. Pure nut pastes are dosed low because the flavour carries; the fat they bring is the part that needs planning. At this dosage expect a softer set and a slower melt, which suits a hot cabinet and works against you in a moulded or stick product that needs to hold an edge.
If you are moving from a compound pistachio paste dosed at 120 or 150 grams, do not assume the lower figure means a weaker product. It means a more concentrated one, and it also means the sugar and fat that the compound was contributing to your balance has just disappeared. Recalculate rather than substitute.
Pail size is the practical argument
At 2.5 kilograms, one pail is roughly 31 litres of finished gelato. For a site running pistachio permanently that is a sensible turnover; for one running it as an occasional special it is too much standing time for a nut paste, and the 1 kilogram Oroverde pail is the better buy even at a higher price per kilogram.
Nut oils oxidise. Buy the pail you will finish, stir it from the bottom before every use, and keep it sealed, cool and away from light.
