About Nocciola Laurus

Laurus is the hazelnut paste for gelaterias whose customers want to taste hazelnut, not to appreciate it. That is a real distinction and not a criticism of either position.

What it is

A hazelnut paste taken to an intense roast, which drives off the light, floral volatiles and develops the deep, slightly bitter, unmistakably toasted notes that most people picture when they think of hazelnut gelato. The colour follows the roast into the characteristic dark shades of toasted nut.

Roast level is the buying decision

Elenka's hazelnut range is organised along a roast scale rather than by quality tiers, and moving along it changes the finished product more than changing origin does.

At the gentle end, Nocciola Piemonte I.G.P. is light, floral and long, and is dosed at 120 grams per litre because it is deliberately understated. At the intense end, Laurus is dosed at 80, because it is not.

Neither is the better paste in the abstract. Laurus is the better paste in a tub that has to compete: alongside a chocolate variegate, under a coating, in a gianduia, or on a busy board where a customer is choosing in four seconds.

In the mix

Eighty grams per litre of finished mix. As with any pure nut paste, the fat it brings is the part that needs planning — at this dosage expect a softer set and a slower melt, which suits a hot cabinet and works against a moulded product that has to hold its edge.

If you are arriving from a compound hazelnut paste dosed at 120 or 150 grams, the lower figure is a concentration difference, not a value one. The compound was also contributing sugar and solids that are about to leave your recipe.

Pail size and turnover

At 5.5 kilograms and 80 grams per litre, one pail is around 68 litres of finished gelato. For a site running hazelnut permanently that is sensible. For one running it occasionally it is a long time standing, and nut oils oxidise — a rancid note in a hazelnut paste is unmistakable and cannot be corrected.

Stir the pail from the bottom before every use. Oil separation is normal and not a fault, but dosing from an unstirred pail makes the first tubs and the last tubs of that pail into different products.

    A hazelnut paste made only from certified Piedmont I.G.P. hazelnuts, gently toasted and milled with no added flavourings. It is the most restrained hazelnut in the range and the most expensive, and it is dosed higher — 120 grams per litre of mix — precisely because it is restrained.

Frequently asked questions

How dark will the gelato be?

Noticeably darker than a gelato made with a gently roasted paste. The intense roast takes the colour toward the browns people associate with toasted hazelnut, which is either the look you want or the reason to choose Piemonte I.G.P. instead.

Can I swap Laurus for Piemonte I.G.P. in the same recipe?

Not at the same dosage. Piemonte I.G.P. runs at 120 grams per litre of mix and Laurus at 80, so a straight swap either overdoses or underdoses by half again. Change the dosage with the paste and recalculate your fat.

Does it work under a chocolate coating?

Yes, and that is one of its better uses. An intensely roasted hazelnut is one of the few flavours that survives being covered, where a delicate paste would simply disappear behind the shell.

What is the yield from a 5.5 kg pail?

Roughly 68 litres of finished mix at 80 grams per litre. Compare pastes on cost per litre of gelato at their own dosages, not on cost per kilogram of pail — the two rankings are frequently different.
