About Sole Soft 400
Sole Soft 400 is the milk-flavoured member of Elenka's complete soft-serve family. It occupies the position that fior di latte occupies in a traditional cabinet: the flavour that everything else is measured against, and the one that shows every fault.
Why the neutral flavour matters commercially
A milk soft serve is rarely the product a customer remembers. It is the product the operator builds on. Ripple it and you have three SKUs from one mix. Dip it and you have a fourth. Add a crunch at service and you have a fifth. The economics of a soft-serve machine depend almost entirely on how many menu items come out of a single tank, and a neutral base is what makes that arithmetic work.
That is also why the flavour has to be genuinely clean. A base with an off-note — a cooked-milk edge, an artificial vanilla — becomes more obvious, not less, once something is layered on top of it.
Dosage and liquid choice
At 350 grams per litre with milk, the finished product is fuller and slightly sweeter on the palate. At 400 grams per litre with water, it is lighter and the milk character reads as cleaner rather than richer. In a hot climate the water dilution has a practical advantage: less fat means a product that recovers faster between servings when the machine is under load.
Running two flavours from one procedure
Because Sole and Cioko share dosage, hydration behaviour and pack size, a site running both needs one training procedure rather than two. That sounds trivial until a Saturday afternoon when the person on the machine started three weeks ago. Consistency of process is worth as much as consistency of product.
Dissolve into cold liquid with the mixer running, rest the mix so the stabilisers hydrate, then freeze.

What flavour is Sole Soft 400?
Milk — a clean fior di latte character rather than vanilla. That makes it the natural carrier if you intend to ripple, top or flavour the finished product, because it does not compete with what you add.
Is Sole Soft 400 suitable as a base for other flavours?
Within limits. It is a complete base with its balance already fixed, so adding a paste on top changes the sugar and fat totals. Small additions of up to about 30 grams per kilogram are usually tolerated; beyond that, start from a white base instead.
How does it compare with Cioko Soft 400?
They are the same system in two flavours: identical dosage, identical handling, identical pack. Sole is the milk version and Cioko the chocolate version, so a site can run both from one procedure.
