What it is
The white chocolate filling in Elenka's Farcitella line, in an eight-kilogram pail. Ready to use at working consistency — no hydration, no cooking, no cooling curve — and formulated to hold shape and moisture through a bake at both low and high temperatures.
The versatility argument
Farcitella Pistacchio and Gold arrive with their flavour decided. That is exactly what you want when the flavour is the product, and it means each pail does one job.
Bianca arrives neutral. White chocolate is sweet and rich without being assertive, which makes it a carrier: fold a flavouring paste through it and you have a filling that tastes of whatever you chose, with the bake stability already solved.
For a section that runs three or four filled products but does not turn over three or four large pails, that is the difference between a viable range and a lot of stock sitting open.
Flavouring it
The Aroma in Pasta line is built for this — pistachio, almond, lemon, orange and strawberry, formulated for creams rather than for frozen product.
Start at about one per cent of the filling's weight and taste at the temperature the finished product will be eaten at. Over-flavoured filling reads as artificial sooner than over-flavoured gelato does, because there is no cold suppressing your perception of it.
Fold rather than beat. Working a filling hard thins it, and a thinned filling is exactly the one that boils out at the edges in the oven.
Bake stability, with the usual caveat
The Farcitella line is specified to perform at both low and high temperatures, which is what lets one pail serve a baked croissant and a cold tart.
That is a formulation property measured against reference conditions, not a promise about your bench. Deck and rack ovens transfer heat differently, and a filling that sits proud at 190 degrees for eighteen minutes can weep at 210 for twelve. Test on your actual schedule and fill weight, and look at the product an hour after it leaves the oven — most filling faults appear during cooling.
Pail size
Eight kilograms is a commitment with an opened shelf life attached. Because this pail can serve several products, it turns over faster than the flavoured members of the line — which is the strongest practical argument for choosing it.
