About Base Vegan Lovers
A vegan base has a harder structural job than a dairy one. Milk proteins do a great deal of quiet work in gelato — binding water, stabilising the foam, giving the mix the body that reads as creaminess. Take them away and something has to replace them.
How the system works
Base Vegan Lovers is a hot-process base, taken to 65 degrees Celsius during preparation. That temperature is not incidental: full hydration of the stabiliser and fibre system is what compensates for the missing milk protein, and it does not happen properly in a cold process. Skip the heat step and the finished gelato will be thinner, will melt faster and will crystallise sooner in the cabinet.
Two dosages, one product
The commercial argument for this base is that it covers both halves of a plant-based offer.
At 210 grams per litre of vegetable drink, it produces cream-style flavours — the chocolate, hazelnut and vanilla end of a vegan cabinet, where the drink supplies fat and the base supplies structure.
At 250 grams per litre of water, it produces fruit sorbets. The higher dosage compensates for a liquid contributing nothing but water, and the extra stabiliser load is what keeps a sorbet smooth rather than granular.
One product, one procedure, two outputs. For a site adding a vegan line without adding a second inventory, that matters.
Which plant drink
Oat is the default for most operators: neutral, naturally slightly sweet, and generous in body. Soy contributes protein and gives the most structure but also the most flavour of its own. Almond and rice are cleaner and lighter, and suit fruit-forward flavours better than cream ones.
Use unsweetened drinks. A sweetened one adds sugar the base has not accounted for, and the finished gelato will be soft and slow to set.

A vegan claim on a menu board is a claim about your kitchen, not only about the ingredient. Dedicated utensils, a documented cleaning procedure between batches and separated storage are the minimum if dairy runs through the same batch freezer.

Which plant drink works best with Base Vegan Lovers?
Any unsweetened vegetable drink at 210 grams of base per litre. Oat gives the roundest body and the most neutral flavour; soy contributes protein and therefore structure; almond and rice are lighter and read as cleaner but thinner. Choose for the flavour you want to end up with.
Is Base Vegan Lovers dairy-free?
It is formulated as a vegan product, which by definition excludes dairy ingredients. We list the dairy-free status as unverified rather than confirmed because we do not yet hold the specification sheet stating the manufacturing conditions. Request it and we will confirm in writing.
