About Pistacchio Puro 100%

There is a version of pistachio snobbery that says only Sicilian nuts count. It is worth resisting, because it leads gelaterias to run pistachio as an occasional expensive special when they could be running it every day.

What it is

A pure pistachio paste made from carefully selected nuts grown in regions with long-established pistachio production outside Italy. Pure means what it says: the pail is pistachio, and the flavour is the nut and the roast rather than a compound built to imitate them.

Where it sits in the line

Elenka's pistachio range is three pure pastes at the same dosage and different origins. Oroverde is Sicilian, from the Etna area, and is the delicate one — floral, long, arriving a beat late. Trinacria is Mediterranean and sits in the middle, rounder and richer. Puro 100% is the most direct of the three: intense, immediate, unmistakably pistachio from the first contact.

Because all three run at 80 grams per litre of mix, you can move between them without touching anything else in the recipe. That is unusual and genuinely useful — it means you can trial the change on a single batch, and it means the choice is a flavour decision rather than a reformulation.

The commercial argument

A gelateria that runs pistachio permanently sells more pistachio than one that runs it when the margin allows. Puro is what makes the permanent version work: the same purity and the same dosage at a cost that supports a daily tub.

Where it is the wrong choice is a cabinet whose whole proposition is Sicilian provenance. If the board says Etna, the paste has to come from Etna.

In the mix

Eighty grams per litre of finished mix, not per litre of milk. As with any pure nut paste, the fat comes with the flavour: expect a softer set and a slower melt, which helps in a hot cabinet and hurts in a moulded product.

Stir the pail from the bottom before every use — oil separation is normal and not a fault, but dosing from an unstirred pail makes the first and last tubs of that pail into different products. Keep it sealed, cool and out of light; nut oils oxidise, and a rancid pistachio cannot be rescued.

Frequently asked questions

Is Puro 100% lower quality than Oroverde?

No — it is a different origin at the same purity and the same dosage. Puro uses nuts from countries with established pistachio production; Oroverde uses Sicilian nuts from the Etna area. What you pay more for in Oroverde is provenance and a more delicate character, not a purer product.

Which pistachio should a busy site run?

Puro 100%, in most cases. It gives a direct, unambiguous pistachio that reads clearly through a board of twenty flavours, and the price per litre of finished gelato leaves room to run pistachio permanently rather than as a special.

Can I blend it with Oroverde?

Yes, and some sites do — Puro for the body of the flavour and a smaller proportion of Oroverde for the aromatic top. Keep the combined dosage at 80 grams per litre of mix rather than adding one to the other.
