Hot Base vs Cold Base: Which to Use and When

Hot process pasteurises and hydrates properly; cold process saves an hour and a machine. The choice is about your kitchen, not about which is better.

A hot process base is hydrated and pasteurised at temperature, typically 65 °C to 85 °C depending on the system. A cold process base is dispersed into cold liquid and matured without heat. Both make good gelato. The choice is a kitchen decision — equipment, labour and food safety — far more than a quality one.

What heat actually does

Three things, and only one of them is about flavour.

It hydrates the stabilisers. Most hydrocolloid systems disperse fully at temperature. A cold-process base is formulated with ingredients selected to hydrate without heat, which is a real constraint on what the formulator can use — not a failure, but a narrower toolkit.

It pasteurises. With raw milk, cream and especially egg yolk, heat is not optional. In Australia this sits under the Food Standards Code, and a cold process cannot substitute for a pasteurisation step on a raw dairy mix.

It changes the protein. Denatured milk protein binds water differently, which is why a hot-processed mix often reads as slightly fuller in the mouth. This is the smallest of the three effects and the one most often oversold.

The case for cold process

Speed. A cold base goes from powder to maturation in minutes, without a pasteuriser and without waiting for a mix to cool.

That matters most for small sites. A pasteuriser is a significant capital item, it occupies floor space, and it needs cleaning validation. A single-site gelateria making twenty flavours in rotation can run a complete cold-process operation and never feel the limitation — provided every dairy input is already pasteurised, which for commercial milk, cream and milk powder it is.

Cold process is also more forgiving of interruption. A hot mix that stalls mid-cycle is a food-safety question. A cold mix that sits is just a cold mix.

The case for hot process

Anything with raw egg. Anything with a raw dairy input. Anything where you want the fullest expression of a stabiliser system.

Plant-based work often lands here too, because vegetable proteins and the gums used alongside them generally hydrate better warm. Base Vegan Lovers is processed hot at 65 °C and covers both sides of the plant-based cabinet: 210 g per litre of vegetable drink for cream-style gelato, 250 g per litre of water for sorbet. One system, two dosages, and the heat step is not optional.

Hot process also gives more control over maturation. A mix that has been to temperature and held for four to twelve hours at 4 °C develops body that a rushed batch does not. If you have the equipment, this is where the difference between competent and good gelato tends to live.

The third option nobody frames as an option

Complete bases sidestep the question. Add liquid, freeze, serve.

Sole Soft 400 and Cioko Soft 400 are both dosed at 350–400 g per litre of water or milk — use the lower dosage with milk and the higher with water — and both are formulated for soft-serve. There is no pasteurisation step to run, no balancing to do, and no separate flavouring paste in the case of the chocolate.

The trade is control. A complete base is the manufacturer's recipe, and adjusting it is not a supported operation. That is the right trade for a soft-serve line, a seasonal pop-up or a second site with less experienced staff. It is the wrong trade for the two or three flavours a shop wants to be known for.

Most Australian operations we deal with end up running a mix of all three: complete bases for high-turnover soft-serve, cold process for the everyday rotation, and hot process for whatever the shop is actually famous for.

Maturation is where the two really differ

Both processes benefit from maturation — holding the mix at around 4 °C before churning — but they benefit from it differently, and the schedule you can run is often what decides the process rather than the other way round.

A hot-processed mix has had its proteins denatured and its stabilisers fully hydrated at temperature. Maturation then lets fat crystallise and protein rearrange around it, and four to twelve hours at 4 °C produces a measurable change in body. Beyond about twenty-four hours the returns flatten and, with dairy, the risks start climbing.

A cold-processed mix uses maturation to finish the hydration that heat would otherwise have done. That makes the hold less optional than people assume: a cold mix churned immediately has not finished hydrating, and the product will read correct on day one and thin by day three. This is the most common cold-process failure, and because the symptom appears days later it usually gets blamed on the cabinet.

The practical scheduling question is whether your production day allows an overnight hold at all. A shop that mixes in the morning and churns the same afternoon is not really running either process properly — and if that is the constraint, complete bases are the honest answer rather than a compromise.

Choosing, in practice

Choose cold process if you have no pasteuriser, all your dairy inputs arrive pasteurised, you make no egg-based custard styles, and your turnover means production happens in short bursts between service.

Choose hot process if you use raw egg or any unpasteurised input, you make plant-based gelato at volume, or you want the maturation window that a heated mix allows.

Choose a complete base if the flavour is a volume line rather than a signature, staff turnover makes consistency a risk, or the site is soft-serve.

The mistakes worth naming

Treating a hot-process dosage as a cold-process dosage. They are formulated differently and the numbers are not transferable. Read the dosage for the product in front of you.

Under-hydrating a cold base. Cold systems need shear and time. Dumping powder into cold milk, stirring briefly and freezing immediately produces a mix that tastes fine and holds badly — the failure shows up two days later in the cabinet, by which point most people blame the freezer.

Skipping maturation because the mix "looks ready". It looks ready long before it is. Four hours is a floor, not a target.

Assuming heat fixes a balance problem. It does not. If the sugar or solids arithmetic is wrong, a pasteuriser will produce a warm version of the same problem.
